Christmas is coming, I know, I know it is still a few months away, but in our house we try to make most of the gifts we are giving by hand. One of my personal favorites is to give baking mixes packaged in canning jars and decorated with pretty labels and some ribbon.
A few nights ago I was making our go to – lazy dinner – food, Pancakes and decided I would share our recipe. It started out as a gift in a jar recipe as well. So here it is.
2 cups of Flour (white, whole wheat, a combination, you can substitute in 1/2 cup of oats)
5 teaspoons Baking Powder
3 tablespoons Sugar (white or brown, can even use less if you would rather)
1/2 teaspoon salt
2 cups Milk
1/4 cup oil
Layer all dry ingredients in a 750mL to 1 quart mason jar. Decorate the jar as you like. Tie a tag on the jar with these instructions:
Empty contents of Jar into a bowl.
Add 2 cups of milk, 2 eggs, 1/4 cup of oil to the bowl.
Allow batter to sit for 5 min, then spoon onto a hot pan in 1/4-1/2 cup size cakes.
These pancakes cook up nice and fluffy. They are a our family’s favorite!
We have made them with chocolate chips or chunks, blueberries, strawberries, raspberries, or mashed up bananas mixed in. All options are delicious.
